High Protein Broccoli Cheddar Soup

I've been trying to eat more protein and drink more water this year. After moving to Maryland almost a year ago, my body has felt kinda off. I think going from working 80hrs a week, to suddenly being in new country with very little to do (I wasn't allowed to work for 8 months after I arrived due to my immigration status), I was kinda in a funk. It wasn't that I didn't have stuff to do, but it's different when you have stuff to do, but don't HAVE to do the stuff. Fitting my life around a very fast paced trucking career meant I had to use my time very wisely. Now I catch myself scrolling social media way too much... but back to my protein goals. 

I would never go full keto, but I definitely feel better if I eat a fair bit of protein. I've been looking for recipes that are high protein, but also full of nutrients. This soup is certainly both, and it's soooooo good. I like that you can dump most of it into the crock pot, forget about it all day, then come back and add the dairy at the very end. High Protein Broccoli Cheddar Soup

2 cups chopped broccoli

½ cup chopped carrots

1 medium onion, chopped

6 cups chicken broth

½ tsp garlic powder

1 cup plain Greek yogurt

½ cup milk

¼ cup nutritional yeast

8oz shredded cheese

2-3 cooked, shredded chicken breasts (or similar amount of shredded leftover chicken)

Salt and pepper to taste

 

Place chicken broth, broccoli, carrots, onion and spices into a crock pot and cook on low for at least 4 hours. 20-30 minutes prior to serving, add Greek yogurt, milk, cheese, nutritional yeast, and chicken. Continue to cook until cheeses are well combined and heated through.
